拉州拉面所需食材:拉面金钱腱卤牛肉包,萝卜,香菜,蒜苗,鸡翅或任何部位的鸡肉。

兰州拉面怎么做?
1. 泡牛肉:将牛肉浸泡在凉水中,盖上保鲜膜在冰箱内放一天,这里的血水之后也大有用处;
2. 煮牛肉:拿出牛肉整块放入锅中,放入卤牛肉包,葱段和姜片,额外的花椒粒,可加几根鸡翅或任何部位鸡肉提鲜,倒入凉水煮开,撇去浮沫后,转小火炖3-5个小时;
3.吊汤,想要拉面汤清澈鲜美,吊汤是必须的。捞出煮好的肉放凉,去掉所有调料,倒入之前泡肉的血水,大火烧开,转小火撇去浮沫,再大火烧开重复同样步骤2-3次后,加入白胡椒粉和一点鸡精,汤就做好了!
4. 拉面煮熟,白萝卜切片后焯水,牛肉切片,蒜苗香菜切成末,依次放入碗中,最后再倒入汤,大功告成!!
